Jacobo and Pablo Moreno are part of the current management team at Pastelería Mallorca, a historic, family-run, artisan bakery founded in Madrid in 1931. Born into a family of bakers, they inherited the business started by their great-grandparents.
Although they have different professional backgrounds — Jacobo studied law and Pablo studied business administration and management — they both began training in the production of the bakery's products, studying in Switzerland and the USA and working in prestigious bakeries and restaurants both nationally and internationally.
Together with several cousins, they took over the family business and have since focused on reviving traditional artisan processes, reducing industrialisation, and maintaining high quality standards in their products. They combine tradition and innovation in Mallorca's offerings, blending classics with contemporary creations.
