Mauro Colagreco

Chef at Mirazur*** (Menton, Maritim Alps, France)

Colagreco has forged his own style when it comes to understanding produce and contrasting flavours. A tradition whose roots hail from the vegetable garden his grandparents had in Argentina.

Of Italian origin but born in Argentina, this chef came to the world of cooking after quitting business studies. After training and working in several restaurants in Buenos Aires, Colagreco decided to journey to the cradle of haute cuisine, France. He trained in the kitchens of Bernard Loiseau, Alain Passard and Alain Ducasse, eventually settling in Menton where he opened his own establishment in a building dating from the 1950s: Mirazur.

Just six months after opening the restaurant, Mauro Colagreco won the ‘Revelation of the Year’ award, a new category in the Gault & Millau guide, in recognition of his achievements. It was the first of many accolades, such as his three Michelin stars, being ranked number one on the World’s 50 Best Restaurants list and named Chevalier des Arts et des Lettres de France.

He also owns GrandCoeur, a brasserie in Paris, as well as the Carne burger chain that only works sustainable top-quality ingredients.
